Shahi Pulav Recipe is a Royal (Shahi) Style Rice Recipe in which Basmati Rice is cooked with the aroma of Whole Garam Masala and flavored with Rich Dry Fruits. The beauty of this shahi pulao is, it is served by itself without any sides, but can also be served with paneer curries, dal makhani, or with any curry, etc. It is an ideal meal for festivals or on special occasions.

  • For Soaking Rice
  • 1.5  Cups Rice
  • 3 Cups Water
  • 3 tbsp ghee
  • 1 teaspoon milk (for soaking saffron)
  • 1 pinch of saffron
  • Dry Fruits And Nuts
  • 4-5 Almond
  • 12-15 cashews
  • 1 tbsp raisin
  • Other Ingredients
  • ½ cumin seeds
  • 1  Tej Patta  ((Bay Leaf))
  • 4 Green Cardamoms ((Hari Elaichi))
  • 2 Black Cardamom ((Badi Elaichi))
  • 1 star Anise ((chakri phool))
  • 4  Cloves ((lavang))
  •  5-6 Black Pepper
  • Salt to taste
  • 1.5  cups thinly sliced onions (or 1 large onion)

Recipe Steps Of Shahi Pulav Recipe

  1. Rinse basmati rice well in water till the water runs clear of starch.
  2. Soak rice in enough water for 20 minutes, after 20 minutes drain all the water and keep the rice aside.
  3. Wash resins and keep aside
  4. In a small bowl mix ½ tablespoon milk and 1 pinch of saffron (Kesar).
  5. Heat ghee in a heavy pot or a pan on low heat.
  6. Add almonds. fry almonds for a minute and keep aside.
  7. Next, add cashews and fry for a second and keep aside.
  8. Keep the flame to a low to medium. Add the cumin seeds, tej patta, green cardamoms, black cardamom, star anise cloves, and black pepper.
  9. Fry the spices for 30 seconds or till they become aromatic and splutter.
  10. Then add thinly sliced onions. mix well and begin to sauté onions till golden brown
  11. Add soaked rice and all dry fruits. Mix well and fry the rice for 2 minutes. Add water (usually, the ratio of rice and water is 1:2 for basmati rice ), depending on the quality of rice, you can add less or more water, Add the saffron solution. (Saffron can be skipped), add salt (optional) mix well.
  12. After the first boil reduce the heat cook until rice is tender and cooked well
  13. Turn off the heat, serve shahi pulao garnished with the fried dry fruits. You can even garnish with a few mint sprigs of coriander leaves.

Useful Tips & Tricks 

  • You can also some fried paneer pieces to this royal rice preparation to give an additional taste.
  • You may also add some saffron. To add saffron, soak saffron in 1 tbsp milk. Add this milk rice when rice is half cooked.  Add saffron milk to the rice and do not mix the rice so the rice gets the nice color of white and yellow. Cook until rice is done. So the rice has shade.
