Ingredients

  • 1-liter milk, full cream
  • tbsp. lemon juice/ vinegar
  • ½ tsp. chili flakes
  • ½ tsp. oregano
  • ½ tsp. crushed roasted cumin powder
  • ½ cup chopped fresh coriander leaves
  • Salt to taste

Method

Step #1. Take 1-liter full-fat milk to the pot.

Step #2. Then Bring it to at least one boil on a medium-low flame, stir occasionally so that a skin does not form on the surface and the milk does not burn on the bottom of the pot.

Step #3. Now it’s time to add lemon juice or vinegar mixed with few drops of water gradually. Stir in the lemon juice, you’ll see milk curdling.

Step #4. After the milk has fully curdled completely, switch off the heat and avoid cooking further to prevent the Chena from turning hard.

Step #5. Now add chili flakes, oregano, coriander leaves, crushed roasted cumin powder, and salt mix well.

Step #6. Now In a bowl take a muslin cloth and pour the mixture into the lined strainer.

Step #7. Add some plain water to get rid of the sourness of lemon.

Step #8. Tightly secure the ends of the cloth, then leave it under some weight for 30 to 40 minutes.

Step #9. Then put it in the fridge for some time to set.

Step #10. Masala paneer is ready to use, slice it thin or cut it into cubes.

  • Always use full-fat fresh milk for the best texture.
  • Ensure excess whey is drained out before you keep it for setting in the fridge.
  • You can refrigerate the whey for up to 5 days in an airtight container.
  • Whey can be added to any gravy as a substitute for water.
