- Cream collected from milk.
Recipe Steps For Making Desi Ghee
- Keep on collecting the malai of milk in a container for over 8-10 days. After boiling the milk, let it cool down at room temperature and refrigerate overnight. In the morning you will get thick malai is formed at the surface of the milk
- You must store the collected malai in the freezer, after 10 days you will have enough malai to prepare pure desi ghee at home. Take out the malai from the fridge and allow it to come at room temperature
- Take a thick bottom pan or wok and transfer all the stored malai into it, now keep the wok or pan with malai on medium flame, occasionally stirring and Malai will start melting.
- Soon you can see the clear bubbles forming in the wok and white grains of milk solids
- Cook on low flame with continuous stirring at this stage till these white grains get brownish and clear ghee on the top, If continuously stirring not done then the solid burnt with unpleasant odor and color to the ghee.,After 10-12 min. ghee will separate completely
- Soon you see clear ghee on top, Switch off the gas and leave the pan with ghee aside to let it cool down a little to filter it, now filter out the grains from ghee through a fine strainer. and collect the pure ghee in a dry and clean container (preferably a glass container).
- Strain off maximum ghee from the brown solid
- Our Pure and healthy desi ghee now with wonderful aroma ready to consume
Useful Tips And Tricks
- Always use a thick bottom pan or wok while preparing ghee at home
- Stirring and cooking on low flame is very important to make ghee as it prevents burning desi ghee.
- You may mix this brown solid with wheat flour and make panjiri
- The brown solid left behind after sieving the ghee is used to make Milk Solids Recipe- Instant Milk Cake
- You may Add 2-3 cardamom and while coking the ghee as clove and cardamom increase the shelf life of ghee.
- This ghee can be stored for a year at room temperature.
