This recipe consists of 3 sections.

  1. Making Pizza Dough – Light, Crispy, Chewy pizza with less Yeast
  2. Making Pizza Sauce- Pizza sauce with Real Fresh Tomatoes
  3. Assembling and Baking Pizza – Instructions to bake  Perfect Golden Crisp Pizza

1. Making Pizza Dough

  1. Firstly pour half a cup of lukewarm water into a large mixing bowl. Dip your finger and ensure the water is just warm & not hot. Don’t add yeast to hot water. It will kill the yeast and won’t let the dough rise. Then add yeast and sugar. Stir and set aside undisturbed for 10-12 minutes.
  2. After 15 min the yeast mixture should be bubbly or frothy indicating it is active. If the mixture is not frothy it means the yeast is inactive and can’t be used for the dough. In this case, discard the mixture and start fresh with lukewarm water, sugar, and yeast.
  3. Now add flour, oil, and salt. Now mix and make a soft dough adding more water (about 2 to 3tbsps) if needed
  4. Knead the dough very well until soft, smooth, and non-sticky for about 5-6 minutes.  If the dough is sticky then you’ll sprinkle some flour. At the top dough should be soft and once you poke it together with your finger, it should recover slowly. This is the indication of the dough is ready. Apply a thin layer of oil to the bowl and the dough as well. Keep covered with the moist cloth to prevent the dough from drying up.
  5. Let it rise slowly for longer so it develops good flavor. Depending on the temperature it will take anywhere from 1 to 4 hours to rise. I advise not to go by timings but to let it rise at room temperature until it doubles or triples.

2.Making Pizza Sauce

  1. To begin with a puree of tomatoes in a blender.
  2. To make sauce, heat oil in a pan and sauté garlic until it smells good. Then add red chili flakes and mix them.
  3. Add tomato puree, salt, and sugar. Stir and still cook covering partially because it splatters tons.
  4. Cook until the sauce thickens and spreading consistency (not runny consistency). Add herbs and black pepper powder. Set them aside to cool

3.Assembling and Baking Pizza

Prepare Veggies

  1. Bring of choice of veggies to room temperature. Avoid using cold veggies from the refrigerator as they let loose moisture on the pizza making it soggy.
  2. Rinse or sliced or cubed the veggies . Avoid chopping onions too small or too large.
  3. Grate the cheese and set it aside.
How to make Pizza (Thin crust
  1. When the dough rises well, punch it a couple of times to deflate and take away air bubbles
  2. Transfer the dough to the work area. Divide it into 2 to three portions counting on the dimensions you favor.
  3.  Knead it a touch and gently shape it to round balls. After this step, you’ll make the pizza or cover the bowl with cling wrap and refrigerate it for up to three days
  4. When you’re able to make the pizza, preheat the oven to the very best temperature, 220 to 240 C or 470F for a minimum of 25 to 30 minutes. Place a baking tray a cast iron pan within the center rack and heat it also within the oven. Sprinkle some cornmeal over the tray. Place the dough over the tray and flatten it slightly.
  5. Add few drops of oil to the dough. Begin to spread and stretch the dough on the tray together with your fingers. Take care to not tear the dough, because it’s extremely soft and stretchy. Flatten to a 9 inch thin even base. Keep the sides slightly thicker than the middle.
  6. At now you’ll prick the dough with a fork if you would like a thinner, crisper crust. This also helps within the crust not bragging when baking. However, you’ll leave the dough as-is for a fluffier, chewier veg pizza crust.
  7. Spread the pizza sauce as desired, leaving about ¼ inch on the sides.
  8. Layer the cheese then the veggies. Lastly, sprinkle herbs and red chili flakes. to end off the top with more cheese if desired to avoid over the veggies.
  9. Place the pizza tray right over the recent baking tray or forged iron pan within the oven. Bake for 10 to 12 min or until the base become crisp, golden and cheese turns slightly golden.
  10. If your cheese doesn’t turn golden, you’ll move it to the highest rack and bake for an additional 1 to 2 minutes.
  11.  Slice pizza and serve hot or warm.
To Make Thick Crust
  1. If making the thick base and your own a little oven, then put the bottom within the oven without the sauce and toppings. Bake it for five to 7 minutes. Later top with sauce, cheese, veggies, and herbs
  2. Bake it for 8 to 10 minutes.
Useful Tips And Tricks
  • Always activate yeast first before adding it to the flour.
  • Avoid employing a lot of yeast. Use less yeast and provides longer to rise well. This results in a much better flavor to the pizza.
  • Let dough rise slowly at temperature. Slow rise pizza dough acquires a singular flavor and better texture. Let it rise until it doubles. On colder days it takes longer.
